Summer berries yogurt parfait with popped amaranth

I’m not going to lie, I am not a fan of yogurt, especially the sweet breakfast ones. I don’t hate it, but it is not a usual thing that I would crave as I don’t like its thick, milky texture – even the vegan ones. I am also more of a savoury person. My favourite breakfast ideas will usually be something like mushroom toast and tofu scramble… or banana bread and just simple jam on toast if I have a sweet craving.

However, King has sweet tooth and loves yogurt. He doesn’t just eat it as breakfast; he also loves them as dessert… So this is a recipe for him…

Just simply layer your ingredients into the glasses. Here is my order for each glass:

– 100ml yogurt
– 2 tbsp blueberry jam
– 1/4 mixed berries
– 1 tbsp of almond flakes and 1 tbsp popped amaranth
– 100ml yogurt
– 1 tbsp of almond flakes and 1 tbsp popped amaranth
– 1/4 mixed berries

It doesn’t really matter if you follow my order exactly or not. The parfait is going to taste yummy regardless, so be creative and feel free to create your own version!

Pre-made jam from the supermarket contains a lot of refined sugar, preservatives, and artificial colour. You can create your own blueberries jam or just replace it with maple syrup if you are looking for a healthier option.

I made and photographed these in the early morning but King only had them the next morning. I was a bit worried that the almond flakes and popped amaranth would get soggy after being soaked in the yogurt for a long time but, surprisingly, the parfait still tasted good the next day. King finished both parfaits in one go…

Summer berries yogurt parfait with popped amaranth

Ingredients:
  • 400ml almond yogurt
  • 100g fresh mixed berries
  • 4 tbsp blueberry jam*
  • 4 tbsp of almond flakes
  • 4 tbsp popped amaranth

Instructions:
  1. You will need two 250ml glasses or small bowls.
  2. To assemble parfaits, pour 100ml of the yogurt into each glass.
  3. Top the yogurt layer with 1/4 of the berries and spread 2 tbsp of blueberry jam.
  4. Add 1 tbsp of almond flakes and 1 tbsp popped amaranth.
  5. Pour another 100ml of the yogurt and another layer of almond flakes and popped amaranth.
  6. Finally, decorate the parfaits with 1/4 of the berries.
  7. Cover glasses with plastic wrap until you're ready to serve.
