- 150ml water
- 1 tbsp sugar
- 1 tsp salt
- 4g active dry yeast
- 2 tsp olive oil
- 250g plain flour
- 1.5 litre water
- 4 tbsp baking soda
- 1 tsp mixed colour sesame seeds
- 1 tsp olive oil for brushing
What to bake over the weekend? I am going to share my best mouthwatering sesame soft pretzels recipe with you.
These golden pretzels are crispy on the outside and soft on the inside and the sesame seeds give a super subtle nutty flavour on top. I love the look of these pretzels, the black and white sesame seeds sprinkled on top of beautiful golden heart-shaped pretzels. The recipe is very easy to follow and only requires 30-40 minutes chilling time. How impressive that you can make these beautiful things at home in less than 2 hours.
An ideal recipe that you can share, cook, bake, laugh and make a fine old mess with kids, friends, family and your loved ones over the weekend.
Activate your yeast with lukewarm water, sugar, salt, yeast and olive oil. Stir and sit for 10-15 minute until you see 2-3 cm foam developed.
Beware – yeast’s life is short, so if you don’t see any or enough foam on the water, check the expiry day on the package. If your yeast has expired, you’ll need to get more.
Combine the flour and yeast blend in a large mixing bowl, knead for 8-10 mins. Then shape the dough into a smooth ball, cover it with cling film or kitchen towel to keep it moist. Let it chill for 30-40 minutes. It should rise and double in size.
Take the dough out, knead it for 1-2 minutes. Divide it into 4 equal-sized parts. Meanwhile, boil the water with 4 tbsp of baking soda in a large pot.
Roll each dough ball into a 1 cm thick, 30cm long rope. Following the pictures, twist the dough rope into a heart-shaped pretzel. Repeat the process until you have 4 lovely pretzels.
Quickly dip the pretzels into the hot baking soda water for 30-40 seconds, then turn over for another 30 seconds.
If you don’t have a very big pot, don’t throw all the pretzels in at once. Do one or maybe two pretzels at a time, because you don’t want them to stick to each other in the pot.
Quickly place pretzels on a kitchen towel for 10 seconds to soak up the excess water.
Transfer pretzels to a baking tray lined with baking paper. Brush with olive oil and sprinkle with sesame seeds.
In just 12-15 minutes, lovely golden coloured pretzels are ready! They make the ultimate breakfast, snack or appetiser. Serve with vegan butter, hummus, jam, chocolate sauce, soup, salad or just on it’s own.
