One of the most significant challenges of being vegan is that you pretty much have to say goodbye to all beautiful pastries such as palmiers, croissants, Napoleon cakes, French apple tarts and countless more…etc. Most of you probably miss the smell, the chunkiness, the taste of these beautiful pastries as well as the memories of having pastries and afternoon tea with your non-vegan loved ones.
Yes, you can create your own vegan puff pastry from home; It is so much fun and very rewarding to make! However, this requires quite an advanced level of cooking skills and is quite time-consuming. You will probably need to practice for a few months before you’re able to create a perfect puff pastry. Unfortunately, most of us have full-time jobs, with long working hours and busy personal life schedules, school, gym, nights out with friends and spending time with families…etc. It is very luxury if you have time to spend time making your pastry from scratch.
I feel so blessed to find out lots of big brand ready-made puff pastries that are actually vegan. They allow me to create some simple recipes like these mini palmiers to cure your pasty cravings. It is just miracle!
To start with, get yourself a roll of puff pastry, leaving it out until it is room temperature. Gently spread out the pastry sheet and sprinkle 1 tbsp of sugar on each side and then roll it into the pastry.
Fold one of the short edges to the centre like shown in the pictures, then do the same to the other side as well.
You’ll end up with a long thing folded piece of pastry. Cut the pastry roll into approx. 1 cm slices. They look like little hearts, don’t they?
Place the slices 5cm apart on a baking tray lined with parchment baking paper and then bake for 10-15 minutes until golden on the bottom.
Turn-over and bake for another 5-7 minutes until the other side is golden in colour as well. You can sprinkle more sugar on the top if you like your palmiers sweeter or just serve them as they are.
These classic palmiers are perfect served with a cup of coffee on a lazy afternoon with your loved ones. It is a completely effortless recipe that anyone can easily follow. Look at all these golden little hearts, how cute. Enjoy!

- Preheat an oven to 180°C.
- Spread out your puff pastry sheet gently.
- Sprinkle 1 tbsp of sugar on each side of the pastry sheet and roll it into the pastry.
- Fold one of the short edges to the centre, then equally fold the other side as well.
- Cut the pastry roll into about a 1 cm slices.
- Place the slices 5cm apart on a baking tray lined with parchment baking paper.
- Bake for 10-15 minutes until golden on the bottom.

- Cool for 10 minutes before serving.
