Mango smoothie bowl

Summer is coming and London has been unbelievably hot during the last week. It has been so surreal that I almost don’t feel like I’m living in London anymore!

It is that sort of weather that makes me crave tropical fruits!!! I went to the market over the weekend and I was so excited to see the price of summer fruits like berries, watermelon, mango and pineapple had finally dropped. A farmer was selling one box of mangoes for £4, and how could I resist such a bargain!? So now I have a huge box of mangoes!

And what should I make with my mangoes?

I got up this morning and decided to start my day off with a lovely mango smoothie bowl. The difference between a regular smoothie drink and this smoothie bowl is that I usually add banana, full-fat coconut milk, vegan yogurt or more fruits to the bowl to thicken the smoothie. It gives it a more intense flavour and richer texture.

This recipe is super simple; it can be ready in 5 minutes.

Simply put everything in a blender and let it do its job. Hassle free… right?

Top your smoothie with chopped mango, banana, pecan nuts and frozen blueberries. If you’d love an even richer ice-cold smoothie, place your full-fat coconut milk in the refrigerator and banana in the freezer the night before.

The deliciousness of the mango and coconut makes me feel as if I am sitting on the beach in Thailand. Having this quick and easy mango smoothie bowl is a truly indulgent and luxurious way to start the day, it brings a smile to my face.

This recipe was created for Veahero, a cool new (free!) meal planning platform for vegans and vegetarians.
