Kale, tofu, mushroom and quinoa protein bowl

This recipe is very light but also very filling at the same time. With mushrooms, quinoa and tofu, its packed full of fibre, vitamins and iron. Not to mention it contains more than 20 grams protein per serving! This protein bowl is my favourite post-work meal.

Heat the oil in a pan, add the tofu and fry for 4-5 minutes until it turns slightly golden in colour.

Add the rest of the ingredients for cooking, stir-fry them gently for another 5 minutes, set aside. And allow to cool for 5 minutes.

De-stem and rougly chop the kale. Boil for 3 minutes, then rinse with ice-cold water and drain well, set aside.

Mix all ingredients in a large mixing bowl and serve.

Ingredients:

For cook

  • 150g button mushrooms, sliced
  • 400g firm tofu, diced into 2cm cube
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp bouillon (vegetable stock)
  • 1 1/2 tsp jerk seasoning
  • 1/2 tsp salt

For mix

  • 200g kale, de-stem and roughly chopped
  • 350g cooked tri-colour quinoa
  • Half lemon, juiced
  • 3 tsp sesame oil
  • 1/2 tsp jerk seasoning
  • 1/2 tsp salt

  1. Heat the vegetable oil in a large, non-stick frying pan, add the tofu and fry for 4-5 minutes until it turns slightly golden in colour.
  2. Add the rest of the ingredients for cooking, stir-fry them gently for another 5 minutes, set aside. And allow to cool for 5 minutes.
  3. Cook the kale for 3 minutes in a pot of boiling water.
  4. Rinse the cooked kale with ice-cold water and drain well, set aside.
  5. Mix all ingredients in a large mixing bowl and serve.
