Grilled asparagus with garlic and lemon

It is asparagus season in Britain again!!!!!!!!! I always believe we should try to eat more local seasonal fruit and vegetables for their taste, environment and value. SOOOO…. today, I am going to share my super simple, easy, and delightful grilled asparagus recipe.

There are many different ways to cook asparagus, such as steaming, boiling, stir-frying, slow cooking and grilling… etc. They all make tasty asparagus. However, grilling is the best for summer because it doesn’t just take out the natural flavour of the asparagus and amplifies it. The char marks give an extra smoky flavour, tenderness and crunch at the same time. No joke, I can eat them like french fries, but healthier.

First, preheat the oven to 180˚C

Trim and peel the tough part at the end of the asparagus spear, if desired.

Crush the garlic cloves by pressing the flat side of the knife against the clove. Make sure the blade is facing away from your hand.

Mix all the other ingredients into a small bowl and brush evenly onto the asparagus spears.

Transfer the asparagus spears onto a baking tray lined with parchment paper, spread them evenly and place the lemon slices and crushed garlic on top.

Bake for 10-15 minutes until the edges of the asparagus spears have turned slightly golden and crispy.

Remove from the oven and serve warm.

Ingredients:
  • 500g asparagus, trimmed and peeled (if desired)
  • 3 cloves garlic, crushed
  • 3 slices fresh lemon
  • 1 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • Pinch of black pepper
