Cinnamon apple puff pastry

Since I try to eat mostly vegan, I always keep a couple of ready-made pastry sheets in my freezer for any sudden pastry-related cravings. This is my third recipe using ready-made puff pastry sheets.

Let’s keep things simple and start learning how to make this beautiful apple pastry now!

Cut the apple in half, core it and cut into 2-3mm slices with the skin still on.

Add a pinch of salt into a large bowl of water, mix well. Soak the apple slices in salted water for 5-10 minutes. This prevents the slices turning brown in the air.

Meanwhile, spread out your defrosted puff pastry sheet gently and halve it, Because each sheet makes 8 pastries and we only have 2 people in the household, half a sheet is more than enough for us. I tend to roll the other half back up and keep it in the refrigerator for other recipes.

Now sprinkle your worktop with a pinch of flour and cut the halved sheet in half and then in half again to make 4 equal pieces.

Transfer the sheets onto a large baking tray lined with parchment paper. Spoon 1 tsp of apricot jam in the centre of each sheet and spread out leaving 5-10mm around the edges.

Sprinkling half of the cinnamon powder on top.

Pour the apple slices into a sieve and shake all the water out. Dry them on a towel or kitchen paper, making sure the slices are completely dry (excess moisture will make the bottom of your pastry all soggy).

Place 5-7 slices of apple on each sheet with each slice slightly overlapping the one before. Sprinkling the rest of cinnamon powder on top.

Bake for 8 minutes, and then brush them with almond milk. Bake for another 5-8 minutes, or until golden brown. Cool for 10 minutes and sprinkle with icing sugar before serving, enjoy!

Ingredients:
  • 1/2 puff pastry sheet
  • 1 apple
  • 1 tsp cinnamon powder
  • 4 tsp apricot jam
  • 2 tsp icing sugar (optional)
  • Pinch of salt
  • Pinch of all-purpose flour
  • 2 tbsp unsweetened almond milk for brushing

  1. Preheat oven to 180C.

  6. Sprinkling half of the cinnamon powder on top.
  7. Pour the apple slices into a sieve and shake all the water out. Dry them on towel or kitchen paper, making sure the slices are completely dry.
  8. Place 5-7 slices of apple on each sheet with each slice slightly overlapping the one before and sprinkling the rest of cinnamon powder on top.

*I used a 320g Jus-Rol puff pastry sheet
