Smoothie
- 1 ripe banana, roughly chopped
- 2 tbsp peanut butter
- 250ml unsweetened oat milk or any plant milk
- 50g rolled oats
Topping
- Dash of peanut butter
- Sprinkle of rolled oats
- Couple slices of banana
I am a very lazy person and always have been. Even as a kid I would rather sleep for an extra half hour than get up early for breakfast. Fortunately, my mother’s cooking skills were not very impressive, so she rarely cooked breakfast at home.
Then when I came to study in the UK I had a busy school schedule and a part-time job so I was burning a lot of calories throughout the day and I started to get into the habit of having breakfast.
For breakfast, besides chia seed pudding and yogurt parfait, my favourite is smoothies. Unlike juicing, smoothies are made by blending ingredients which means putting whole pieces of fruit and vegetables in the blender so that no nutrients are lost. They’re really effortless to make; a delicious breakfast ready in less than 5 minutes.
This smoothie contains only 4 ingredients: banana, creamy peanut butter, oatmeal and oat milk. It is nutritious, rich in protein, and it tastes like a cup of dessert!
Lately, I have been really obsessed with this peanut butter, it is wonderfully creamy and so easy to melt, which is ideal for making smoothies, dressings or any cooking sauces.
I also reserved 3 slices of banana for the topping but this is of course completely optional.
Place all the smoothie ingredients in a blender and blend until smooth.
Pour into a glass and garnish with the topping ingredients, done!!! How simple is that? 🎉
King was away in Spain visiting his family while I was making this smoothie so the recipe is only for one. However, if you want to make a smoothie for two, you can easily double it up.
